In Mexico and Central America Christmas, time means “Tamal Time”. From the feast of Our Lady of Guadalupe on December 12 through Three Kings Day on January 6th, tamales are a culinary requirement. This class will feature two kinds of tamales; a traditional Mexican pork tamale in a cornhusk, and a banana leaf tamale from Guatemala.
