Lorie Fangio's Four-Course French Menu Inspired by Fall

Participants learn to create a four-course fall-inspired French meal. This culinary event begins with a starter course of a Savory Au Bon Pain Tomato Basil, followed by a rich vibrant red pepper soup topped with crème fraiche. The main course includes juicy flank steak with a beautiful red wine and shallot sauce served alongside delectable Potatoes Dauphinoise. For a sweet finish, guests can enjoy Spiced Madeleines and Autumn Dark Chocolate Mendiants.

Join Chef Becky to bring the harvest into your kitchen with some tasty recipes and cooking tips. You will try a delicious Butternut Squash and Apple Bisque with a Roasted Brussel Sprout Salad. Also a SW Pumpkin Chicken Hominy Stew with a Cilantro Lime Sour Cream and a Pumpkin bread pudding drizzled with warm chocolate sauce and sprinkled with spiced nuts.

Get your hands on cacao here! Learn techniques for making flavor infused ganache and roll your own truffles. This hands on chocolate class will introduce you to making your own flavor-infused chocolate ganache and rolling truffles. Each student will have the opportunity to sample a variety of chocolate, experiment with different flavors and take home a box of their own handmade chocolates!

Farm to Fork Cooking with Chef Eva of the Greer Farms

The Dallas Arboretum has teamed up with Greer Farms out of Dangerfield, Texas to offer a series of cooking classes. During this class, Chef Eva Greer will teach attendees how to prepare:

  • 11/11: Crispy butternut fritters with creamy chipotle dipping sauce. Butternut squash with chicken and spinach lasagna roll ups.

Brunching is a wonderful way to entertain over the holiday season. Imagine yourself armed with amazing recipes to serve visiting family and friends through the holidays and beyond. We will begin our brunch with Vanilla Cinnamon Scones baked to perfection. Pecan Bourbon Glazed Pork Loin will be tender and juicy and the centerpiece of the feast. Parmesan Crusted Potatoes are outstanding nuggets of delight and tender crisp Green Bean and Cranberry Salad will be a fantastic addition to any holiday table. For a fabulous sweet finish we will craft a gorgeous Pear Amandine Tart.

Family Fun in the Kitchen, Presented by Young Chefs Academy

Price: $15 for adults | $10 for Children

This endowed series encourages parents or grandparents to spend quality time with younger members of their family. Hands-on classes are geared towards children ages 5-8 and an accompanying adult. Class size is limited, so sign up early.

Lorie Fangio, teaching chef and owner of A Taste of Paris culinary trips, will lead you through a class on comforting soups stews and breads. When it’s cold outside, nothing warms your soul quite like fresh bread and soup. The tasty goodness will begin with French Loaves guaranteed to make your house smell amazing. Our first soup is the chef’s favorite, Shrimp and Roasted Poblano Pepper Soup. We will prepare a simplified Boeuf Bourguignon, this easier version does not sacrifice flavor. Sure to become a fam fav is Southwest Chicken Soup perfect served with Jalapeno Cornbread. For a sweet finish rustic Apple Crostata will hit the spot!

Lorie Fangio, teaching chef and owner of A Taste of Paris culinary trips, will introduce you to the wonderful world of French pastries. We will start our time together with Sundried Tomato and Basil Pailmers, a yummy appetizer or snack. We will prepare Salmon Artichoke Tart served bistro style with salad greens and then onto the sweet stuff. Two classic French recipes will be taught while making Raspberry Eclairs stuffed with Pastry Cream. Next up, dense, versatile and delectable Chocolate Moelleux is a fantastic recipe to have up your sleeve. Precious Lemon Tarts with Sable crust make the perfect finish to any meal and Amaretto Vanilla Bean Madeleines are lovely with afternoon coffee or tea. Oui, sil vous plait!
